Here is my favorite quiche recipe.

Aztec quiche:
Ingredients:
1 1/4 cup Monterey Jack cheese,grated
3/4 cup Cheddar cheese,grated
1 deep dish (9 ") frozen pie shell / or homemade :)
1 can (4 oz size) diced green chilies
1 cup half and half
3 eggs, beaten lightly
1/2 teaspoon salt
1/8 teaspoon ground cumin
Directions:
Spread Monterey Jack cheese and half of the cheddar over the bottom of the pie shell. Sprinkle diced chilis over cheese.
Stir together in a bowl the half and half, eggs and seasoning. Pour carefully into pie shell. Sprinkle with remaining cheese.
Recipe can be frozen at this point if desired: Cover pie with foil and put in freezer.
To bake: if frozen, remove foil and thaw. Bake uncovered at 325 degrees for 40-50 minutes. Serve immediately.
